"I love my red hair. People called me a 'ginger minger' when I was younger so I didn't always appreciate it. I went through a phase of wanting to dye it blonde. But my mum wouldn't allow it - and now I'm so grateful that I never touched it," she said.

The Clonmel model, who won the Miss Ireland title in 2013, is rubbing shoulders with the rich and famous as she holidays in the exclusive Hamptons area of Long Island.

The qualified secondary school teacher has spent the past few weeks over in New York as she enjoys some well-earned downtime from the modelling scene.

The 26-year-old, who attended the same school as her agent Andrea Roche, took to Instagram to say how she was "so sad to be coming home after a fab two weeks".

Aoife, who is over there with her Sligo solicitor boyfriend Gary, has been living the high life and rented a Mustang convertible to see all the sights.

She also enjoyed a helicopter ride over Manhattan and took in the atmosphere of a baseball game in Yankee stadium.
