The 29-year-old Dubliner was forced to take time out last year.

"I was in Vietnam last year and I had to go to hospital and I had just reached exhaustion.

"Then I came home and did a 20-day tour, so it was just crazy."

Skehan admits that he was finding it tough to enjoy his work with such a hectic schedule.

"I was at a stage where I wasn't enjoying the food or getting to cook," he said.

Now that the book 'Fresh' has hit the shelves, he and wife Sofie will be able to spend some downtime together.

"To be honest, we haven't had as much time out, I don't know if we had the honeymoon period or the chance to just settle down - but we will now," he said.
