Roz Purcell: I’m the boss in the kitchen, Bressie promises me his dishes are healthy - then I see cans of cream in the bin

Former Miss Ireland Roz Purcell has turned her passion for cooking into a lucrative business, so it’s not surprising that she likes to take control in the kitchen.
The 24-year-old model is enjoying the opportunities that her nutritious and delicious food blog is sending her way.
Unsurprisingly, the Tipperary native is happiest when she’s cooking up a storm in the kitchen. In fact, her ideal date night is preparing a meal for her boyfriend of over two years, the musician Niall ‘Bressie’ Breslin.
“For my dream date, I’d definitely prefer to cook! The first time Bressie cooked for me he promised he was making something healthy...but then I spied all the empty cans of cream in the bin. I thought, ‘I better only eat a little bit of this now because it’s probably really bad for me’...but then it was so delicious I ended up shovelling it into me.”
Roz is committed to ensuring each one of her recipes is abundant with wholesome and natural ingredients.
“I just enjoy the process of cooking too much. I wouldn’t enjoy getting a takeaway because I love the ritual of getting the food ready and the home comforts of a well cooked meal,” she told Independent Style.
“If I wanted to impress someone I’d do my go-to dish: I cook a mean lamb shank. No calories are watched here! I make a gravy from the juices of the meat and vegetables too. It’s a lot of work, I prepare it the night before and leave it marinate,” she revealed.
Likewise, if she was given the opportunity to host her ‘dream dinner party’, she'd be slaving away in the kitchen ensuring her guests left satisfied.
"I’d invite Graham Norton and Joan Rivers. Samuel L Jackson so he could repeat everything everyone says in his amazing voice. Amal Clooney, because I want to ask her what’s going on with her and George. Kris Jenner too, because I want to know what’s behind that whole family and she seems like good craic! I’d ask Larry Davis, he’d be so awkward and blunt."
“I would definitely be the cook for them - I’d probably do a big dish like a Moroccan lamb tagine with quinoa tabbouleh.”
Thanks to the success of her online platform Natural Born Feeder, Roz has been approached by publishers, tv producers and restaurateurs eager to sign her up.
Her most recent collaboration is with the salad brand Florette.
“The great thing with a food blog is, there’s so many things that it branches out to. I’m doing bits of everything to see what I like. Anyone who knows me knows I tend to change my mind a lot, I’m enjoying the tv slots right now and I like developing the product range. It’s all a lot of fun.”
The hard-working model now works on a range of clean treats, smoothies and protein rich snacks to some of Dublin’s most popular eateries.
“I train the staff in Chopped and Mooch how to make things with my methods and recipes. Then I go in regularly to check the standard is up to scratch. I’d love to be cooking every day but I just don’t have the time between modelling and everything else.”
With everything that she has going on, there won’t be much time for relaxation over the summer. Not that this bothers chirpy Roz.
“I’ll definitely do an Iron Man in there somewhere and an ISPCC cycle in September from Portugal to Santiago. My idea of relaxing is a sports holiday or doing something to do with my blog anyway.
"I would love to travel more eventually. India and Thailand are still on my list... you would pick up such amazing recipes!”
Seems like she’s got a pretty full plate.
