Tell me why GAA don't like holiday Mondays

WHY is there such an aversion to using Bank Holiday Mondays for major GAA games? The Divisions 1 and 2 NHL finals have been fixed for 7.0 and 5.0 respectively on Sunday, May 2, to avoid a clash with the Biarritz-Munster rugby game.
Many would argue that since the rugby game is being played in France and only screened on Sky Sports (as opposed to RTE, which is available in every house in the country) the GAA should run with the 4.0 and 2.0 starts as originally planned.
Munster versus Biarritz would probably have hit the attendance figure in Thurles but delaying the hurling final until after the rugby is over could lead to an even bigger drop as Sunday evening games at neutral venues are not attractive to supporters, even on the eve of a Bank Holiday.
So why not switch to the following day altogether? After all, there are precedents for May Bank Holiday league finals in 2003 and 2005.
