Corner-forward Sean McGrath was the driving force behind St Peter's come-from-behind win in Carnew.
Colaiste Bhride, beaten in the final for the last two years, looked as if they were going to crush their opponents as they raced into a 1-3 to no score lead inside eight minutes.
St Peter's struggled to get the ball past halfway in the opening quarter and looked in dire trouble when a defender carried the ball over his own goal-line as he tried to deal with a shot from Carnew corner-forward Olly Doran.
The switching of Cathal Meehan into the full-back line steadied their defence and the Dunboyne school turned the game around in the second quarter and were just one point behind at half-time.
McGrath landed three rapid-fire points between the 43rd and 45th minutes, two of them from frees, to put St Peter's ahead for the first time.
John Fleming kicked two smashing points to edge Carnew back in front, but St Peter's full-forward Luke Harte and McGrath countered to put St Peter's back in front.
The Meath team sealed victory in the 54th minute when Harte punched the ball into the net following a move involving McGrath and Shane Whitty.
