Next generation of O'Connor's set up Kool Scoops
WHAT was once the family sitting room of a Dingle home is now a burgeoning ice-cream business as John O'Connor opened the doors of 'Kool Scoops' last week.
Kool Scoops on Strand Street is the latest new business to open in Dingle and the proprietors, local family the O'Connors, are delighted with the level of support they have experienced since their launch.
"It's something we have been thinking of doing for a long time," John, who runs the business with his wife Áine and children Ciara and Aodán, told The Kerryman.
John grew up in the building where Kool Scoops is now located with his parents, Jackie and Kathleen, and his brothers, Joseph and Brendan.
"Where we are standing now was the sitting room so it's great to be here now again with 'Kool Scoops' and the next generation of O'Connors!" he added.
John, a well-known local businessman who is also involved in the Dingle Tidy Towns initiative and the Dingle Fife and Drum Band, also told The Kerryman how this new business is somewhat reminiscent of 'old times in town.
"Strand Street has always been a really family-orientated place and we are finding that people often call in for just a chat or to say hello - it's kind of like the way things used to be," he said.
'Kool Scoops' which sells Irish-made ice-cream, confections, coffees and teas, reported good footfall since its launch and John, along with many of his compatriots in Dingle, is looking forward to a busy summer and hopefully, some fine weather.
