Stephen battles it out for student chef of the year

STEPHEN WALSH from Kilmacanogue, and a student at Tallaght IT, was one of 10 chefs to battle it out in the Knorr Student Chef of the Year competition held in CIT this week.

Stephen, whose menu included a starter of panseared scallops in vanilla oil with gingered pork fillet and a pineapple nettle salsa, was presented with a certificate of achievement by Jim Reeves of Unilever Ireland, who also congratulated him on the originality of his menu and the innovative way in which he used locally sourced produce in his recipes.

His main course was a roast loin of venison in a pistachio crust with sweet potato colcannon, glazed beetroot and a chocolate, red wine and port jus.
