Judges relish the great taste of Rafferty's jam

Local Chef Declan Rafferty has scored an instant hit in starting up his own food producing company with two of his products winning Gold star ratings in the renowned Guild of Fine Food Great Taste Awards 2013, the world's largest and most rigorous food awards scheme.

Declan's award winning Tomato & Roasted Red Pepper Relish and his Three Berry Jam were among over 10,000 products evaluated recently by over 400 judges, involving thousands of hours of blind tasting.

The Great Taste Awards scheme was established in 1994 to encourage and mentor artisan food producers and since then over 80,000 products have been evaluated. The Great Taste Awards are internationally recognised and this year alone more than 2,100 companies worldwide entered.

All products are blind-tasted by panels of specialists, including top chefs, cookery writers, food critics, restaurateurs and fine food retailers. The judges look for great taste, quality, texture and excellence. They judge the quality of ingredients and how well the maker has put the food or drink together. But above all, they are looking for truly great taste.

Declan who resides in Blackrock, is the chef /manager in the restaurant at the nearby Dundalk Golf Club. He decided to develop his own range of artisan products and started up his own self run enterprise under the name of Rafferty's Fine Foods. He entered two of his most popular products in the Great Taste Awards and both came up trumps.

Rafferty's Fine Foods product range include chutneys, relishes, jams, marmalade, salad dressings, marinades, flavoured oils, pates and a range of Christmas products. These homemade artisan products are used daily by Declan as part of the delicious signature dishes he serves in the restaurant at Dundalk Golf Club.
