Lamb: Try red wine with soft juicy fruit and lots of ripe tannin. Choose Spanish Crianza or Reserva style, good quality Bordeaux or 'fruit forward' styles from Australia, Chile or California made from cabernet sauvignon. For something different go for Portuguese wine from the Douro region.
Turkey: Go for a light, juicy red wine like aged Spanish wines or wines from the pinot noir grape. That could be a Burgundy or a pinot noir from Chile or New Zealand.
Chicken: Burgundian chardonnay will go well with roast chicken and all the trimmings. Oak-aged chardonnay will go well with creamy or lemony sauces and you can also try pinot grigio with poultry or seafood.
