Hot and spicy coleslaw

Hot and spicy coleslaw

This is a light yet crunchy and satisfying version of the mayonnaise-laden dish.

You will need

3 tbsp rice vinegar

1 tbsp low salt soy sauce

1 tbsp coconut oil

1 tsp grated fresh ginger

1/4 tsp ground white pepper

1/4 tsp crushed red pepper

3 cups shredded green cabbage

1 cup thinly sliced red bell pepper

1/3 cup sliced scallions

1 can bamboo shoots, drained and sliced

Method

Whisk vinegar, soy sauce, coconut oil and ginger in a bowl. Add white pepper and crushed red pepper and mix. Add cabbage, bell pepper, scallions and bamboo shoots and mix once more.
