As many of you will have heard, Amelda and I have been joined in our family by twins Connor and Lucia. What a big change in our lives and what a fantastic one.
We are so thrilled and so thankful for the many kind things people have said. And today's recipes are the sort of weekend lunch that I am so looking forward to cooking for them in years to come.
Pea and mint soup is a very refreshing starter at any time of the year. It is tasty and light, and mint is so easy to grow in the garden. This is one of my mum Vera's favourite dishes. You can use courgettes instead of peas and it is just as good.
In the roast lamb recipe, you are using mint again in the mash. I think it makes a nice change from the more traditional roasties.
We have such great lamb in Ireland. Your butcher will see you right.
And I notice that more and more people are now roasting their vegetables. It keeps the sweetness in the taste.
What better way to finish a family meal than with a homemade apple tart? It transports everyone back to their childhood, so we will be starting our two new arrivals on it in the not too distant future.
