Recipe of the day: Sausage Casserole with Chilli and Kidney Beans

THIS sausage Casserole Recipe with Chilli and Red Kidney Beans is a perfect winter warmer.

It makes for a warm, nourishing winter meal and is best served with a baked or mash potato. 

10 quality Sausages

1 onion diced

1 Garlic Clove sliced

1 tin kidney beans

1 tsp Chilli Powder

1 tsp Ground Cumin

Red Wine 150 ml

Beef Stock 300 ml

1 tablespoon Tomato Paste

1 tablespoon Brown Sugar

1 tsp salt

 

Method:

 

1 . Preheat the oven to 180C

2. Brown the sausages and then remove

5 . Add a thinly sliced onion

6 . Cook for about 4 minutes until they brown

7 . Put the onion, sausages and kidney beans in a pot

8 . Return the frying pan to the heat and add the chilli powder, ground cumin, red wine, beef stock,  kidney beans, brown  sugar and season with a little salt

9 . Bring to the boil and then pour over the sausages in the pot.

10 . Bake in the oven for 20 minutes.

11 . Serve with Mash Potato or Baked Potato
