This is an extremely versatile, simple recipe which is delicious. For a family meal, replace the chorizo with chicken thighs or legs; for entertaining, a fillet of meaty white fish, steamed or roasted with a little olive oil can be used and, as comfort food, add some chopped spinach towards the end of cooking, some roasted diced potatoes and serve with a dollop of creme fraiche or sour cream and some crusty bread. The basic recipe can be made in advance and kept in the fridge for three days (covered) and it also freezes well.
SPANISH CHICKPEA AND CHORIZO STEW (Serves 4)
Ingredients
400g tin of cooked chickpeas, drained and rinsed
2 medium-sized onions, peeled and finely diced
1 tablespoon mild olive oil
2 x 400g tins chopped tomatoes
100g packet pre-sliced chorizo, sliced.
1 medium chilli finely chopped (hotter if you like!)
2 cloves garlic, peeled and finely chopped
1 handful chopped basil, coriander or parsley
2 red peppers deseeded and diced in 1/2 inch squares
Salt and pepper
Method:
1. Soften the onion and diced pepper in a saucepan with the olive oil on a low heat.
2. When soft, add the chorizo, garlic and chilli and stir regularly. Allow the flavours to infuse and don't let the garlic burn.
3. After five minutes add the chopped coriander (or your chosen herb), chickpeas and chopped tomatoes.
4. Cook for about 10 minutes, stirring regularly. Add seasoning to taste and a little water if you prefer a thinner consistency.
