Donal skehan's Clementine Pomegranate Prosecco Punch

This makes for a wonderfully festive little pre-dinner drink at Christmas. Serves six.

YOU WILL NEED

Juice of 10 clementines

1 pomegranate, sliced in half

1 bottle of Prosecco, chilled

Method

Juice the clementines and chill in the fridge. Gently squeeze the pomegranate halves to release some of the juice. Hold each pomegranate half cut-side down and bash with the back of a wooden spoon to release the seeds.

Add the juice and seeds to the juice. Pour the mixture into Champagne flutes. Top with Prosecco and serve.
