Dine on saved time

It may be May, but we are still looking to hearty, warming dinners for a little early-summer comfort. This week, I've chosen these three dishes because they are delicious, nutritious and affordable dinners.

So many people are time poor and really appreciate dishes that can be prepared in advance, yet taste great on the day that they're served.

Brisket is a tasty, inexpensive boneless cut that requires long, slow cooking and it is worth the effort. In my opinion, it is one of the best meats to braise and lends itself to cooking a day or two in advance and then re-heating on the day.

Spare ribs are a favourite in our house and my advice is to cook plenty because people will be coming back for more. I always find that chicken legs are more tasty than breast meat and are considerably cheaper too.

While I love this black-pudding stuffing, you could also use a bread stuffing. This recipe is ideal for cooking in quantity and then sending everyone off to work and school the next day with a delicious lunchbox of spicy chicken meat which also works well in sambos too.

These recipes are all recession proof and you can save a fortune on family dinners. Plus you get to spin them into a tasty lunch the next day. Enjoy!
