Dublin Airport is to open a new, market-style dining area this August, bringing over 80 new jobs to Terminal 1.

'Marqette', a new food and beverage area modelled on an outdoor food market, is currently under construction after T1's security screening area.

Once complete, the restaurant area will cater for over 260 people and feature fresh and locally-sourced produce in "an earthy rustic setting," according to Dublin Airport’s Food and Beverage Manager, Brendan Dee.

Breakfast will start from 5am, with service winding up after the last flight.

Customers can expect artisan bread baked on site, barista coffee, and a vintage Citroen van selling freshly made omelettes and crêpes, among other offerings.

“The restaurant has been designed specifically for good customer flow to ensure people are served quickly,” Mr Dee explained.

The new brand and food area falls within the ongoing, €8 million redevelopment of The Loop, Dublin Airport's 18,300-square-foot airside retail area in T1.

Due to open at the end of August, Marqette is now moving into its recruitment phase, with over 80 chefs, kitchen porters, baristas, bar staff, supervisors, managers and floor staff actively being sought at all levels.

Recruitment open days will be held in the Maldron Hotel, Dublin Airport from 12pm to 8pm today (Tuesday, June 23) and this Thursday, 24 June.
