Yuletide cheer

GLÜHWEIN/VIN CHAUD

Wrapping your hands around a glass of steaming glühwein as you watch the snow fall is definitely one of the best things about mountain living.

Serves 6-8.

YOU WILL NEED

1 bottle full-bodied red wine

100 ml brandy

1 cinnamon stick

3 cloves

1 star anise

1 orange, sliced

1 lemon, sliced

50-75g caster sugar, to taste

METHOD

Put all the ingredients in a large pan with 250 ml water. Heat gently until the sugar dissolves, then serve ladled into mugs or glasses.

SPICED APPLE CIDER

Fruity and full of spices, you will find this slips down very easily.

Serves 4.

YOU WILL NEED

600 ml medium sweet cider

75ml calvados or brandy

1 cinnamon stick

1 vanilla pod halved

A small knob of butter

METHOD

Put the cider and calvados in a pan with the cinnamon and vanilla, heat gently until steaming then whisk in the butter and serve immediately.

MAPLE OLD FASHIONED

The most classic of cocktails, fabulous as an apéritif.

Makes 6.

YOU WILL NEED

2 tablespoons of crème de cassis

1 bottle sparkling wine or champagne

METHOD

Stir the bourbon with the maple syrup then add the bitters. Run the slice of orange around a rocks glass and fill with ice. Pour over the cocktail and add the slice of orange.

HOT TODDY

The classic hot toddy is not just a cure for colds and sniffles.

Makes 2.

YOU WILL NEED

140 ml water

140ml whisky

Finely grated zest of 1 lemon

2 teaspoons of honey or caster sugar

2 slices fresh ginger, peeled

2 cloves

METHOD

Put all the ingredients in a pan and heat together gently until the sugar or honey dissolves. Strain, pour into cups or glasses and serve.
