Tuna and brown rice salad

Tuna is a fantastic source of protein and brown rice is full of fibre and healthy carbs, making this an all round healthy dish.

 

Serves 1

You will need

1 tbsp pickle relish

1 tbsp apple cider vinegar

2 tsp coconut oil

½ tsp Dijon mustard

1 cup brown rice

100g tin of tuna, drained

¼ cup carrot, shredded

¼ cup cucumber, diced

Handful of sunflower seeds

Method

Boil your brown rice until cooked through, sieve and let cool (time will vary according to brand).

Mix relish, vinegar, oil and mustard. Add remaining ingredients and toss to coat. Serve and enjoy.
