Going into work with my dad to George's Bistro, and the chefs in the kitchen teaching me how to cook

My mum and dad - they have always been such an inspiration to me and such a support in everything I've ever done

I'm doing a lot of foraging, so I'm never without my copy of Edible Seashore by John Wright

My whites - it's great to get them on and surround myself with lots of amazing, sustainable Irish seafood

Negativity - it achieves nothing

Anything that gets me into the sea: sailing, kayaking, surfing, diving, or swimming

My banjaxed hands from working in kitchens

Michael O'Leary. He has revolutionised air travel in Europe and done so with humour on his side

I hope it's that I try to always see the good in someone

The vice

Chicken wings. Our chef, Florin, came up with the most amazing sauce that just keeps you going back for more and more

The smell

One of our dry-aged steaks on the grill! I'm salivating just thinking of it

The taste

Easy, a piece of fresh fish! I could eat it all day and every day (which I tend to)
