Classic Collection Red Burgundy 2007 -- from Guy and Jean-Yves Sarrazin in Givry. Light on the palate, but a depth of pure and vibrant red fruit, reminiscent of strawberry and rasperry; peppered with clove spice, which gives it sufficient oomph to hit exactly the right note with the roast chicken. 12pc alc. €12 Available from Superquinn. Tim Adams Semillon 2004 -- a real winner from Australia's Clare Valley; six years on and showing how this grape can age gracefully; layers of rich and creamy baked apple, honey, candle wax and floral spice, while retaining a fresh citrus bite and a lively finish.
