Simple root veg mash
This is a healthy mash which goes well with any meat.
Serves four to six.
YOU WILL NEED
950g/2lb 2oz sweet potatoes, turnips and parsnips, peeled and chopped into 2.5cm/1in pieces
1 tsp honey
1 tbsp wholegrain mustard
Sea salt and ground black pepper
Put the root vegetables in a cooking pot and fill it up with cold water. Place over a high heat and bring to the boil.
Cook for 15-20 minutes or until the vegetable pieces are tender when pierced with a fork.
Drain the veg completely in a colander, then return it to the pot.
Add the butter, honey and wholegrain mustard, and mash with a potato masher until completely smooth.
Season with sea salt and ground black pepper and serve.
