Sage, Onion and Pine Nut Stuffing

3oz butter

1 large onion, peeled and diced

1 tbsp chopped parsley

1 tsp chopped sage

1 tbsp chopped apricots

2oz pine nuts, toasted

6oz fresh white breadcrumbs

Method

Melt the butter in a pan and cook the onion for a few minutes until it softens. Add the herbs, apricots and pine nuts, and mix well.

Stir the mixture into the white breadcrumbs and mix well.

The stuffing is now ready to go in the turkey.
