Rum Butter

You will need

110g icing sugar, sieved

125g butter, soft

20g ground almonds

1½ tbsp dark rum

1 tsp vanilla essence


Blend the icing sugar, butter and almonds together.

Add the rum and vanilla, whipping it together until light and fluffy.

Place the rum butter in a small jar to serve alongside the hot mince pies.
