Richard's romantic notions

"When I was going to catering college on day release as a lad of about 15 or 16 one of my lecturers in Cathal Brugha Street was a lovely man called PJ Dunne.
"He had been the head chef in Jammet's in its latter years, and I was always fascinated by his colourful stories about the restaurant, the amazing French dishes they served there and the top-class clientele who used to eat there.
"I loved the romance of it all, and determined that I would sometime have a restaurant of my own and call it Jammet's.
"In fact, I nearly called Lindsay House in Soho Jammet's, but ran into difficulties with the authorities about a name change, so it had to be Richard Corrigan at Lindsay House.
"But I promise you Richard Corrigan's Jammet's is going to happen in Dublin. It could be later this year, but certainly by summer 2011 it will be there.
"Where it will be is still up in the air. I am having a meeting with Louis Murray, who owns Balzac in Dawson Street, next week, but nothing is decided yet. I'm smitten by the space for sure.
"I have no comments to make about Bentley's at this time. I will be making a statement, but not at this time."
