Orange and Feta Salad
Serves 4 as a side
Prep Time: 15 minutes
2 large handfuls of baby spinach
2 tablespoons of crumbled feta cheese
2 tablespoons of pomegranate seeds
1 tablespoon of orange juice
1 tablespoon of honey
3 tablespoons of olive oil
1 tablespoon of red wine vinegar
1. Peel two of the oranges and slice them into rounds. Squeeze the juice from the additional half orange so that you have about one tablespoon of orange juice. Set aside the juice to use in your salad dressing in a bit.
2. Arrange the baby spinach on a large serving platter. Arrange your orange slices around the baby spinach. Scatter the feta cheese and pomegranate seeds over the salad.
3. When you're ready to serve, make the dressing by mixing together the orange juice, honey, olive oil, red wine vinegar and a pinch of salt and pepper. Pour half the dressing over the salad and serve the rest of the dressing on the side.
