It's been a year since crowds of media waited with baited breath outside St. Mary's Hospital in Westminster for the arrival of the royal baby. Now, gorgeous Prince George is toddling around after the Duke and Duchess as he celebrates his first birthday.
How time does fly!
It seems Prince George is already a dab hand at impressing the royals but imagining the hoards of delicious cakes at this baby's birthday party is enough material to provide beautiful dreams for many months.
While normal birthday parties probably wouldn't compare to those in Westminster, these scrumptious chocolate cupcakes with a rich fudgey icing usually induce a smile or two. Here's the recipe.
300g dark chocolate, broken into chunks - don't use one with a high cocoa content
200g self-raising flour
200g light muscovado sugar, plus 3 tbsp extra
6 tbsp cocoa
150ml sunflower oil, plus a little extra for greasing
284ml pot soured cream
1 tsp vanilla extract
Heat oven to 180C/fan 160C/gas 4 and line a 10-hole muffin tin with paper cases. Whizz the chocolate into small pieces in a food processor. In the largest mixing bowl you have, tip in the flour, sugar, cocoa, oil, 100ml soured cream, eggs, vanilla and 100ml water.
Mix everything together before adding 100g of the whizzed up chocolate. Divide the mixture evenly between each cupcake case and bake for 20 minutes.
To make your icing, melt the remainder of the chocolate with the rest of the sour cream along with 3 tbsp of sugar. Chill in the fridge and ice your buns when cool.
Top with pretty sprinkles and serve.
