Hoisin salmon glaze.

Hoisin sauce is a traditional Chinese BBQ sauce and is an essential Pantry Pal.

It is a mixture of soy sauce, garlic, spices and molasses. The thick, sticky, aromatic sauce is delicious when used as a marinade or glaze. It has a unique flavour and can be combined with other sauces and spices and used in stir-fries, dipping sauces and dressings. It has quite a long shelf life, but once opened, I prefer to store mine in the fridge.

Brands vary greatly, so choose a good quality one.

(Serves 4)

Ingredients:

4 salmon fillets

4 tbsp Hoisin sauce

1 tbsp light soy sauce

Freshly ground black pepper

Crunchy topping:

125g radishes, thinly sliced

1 bunch spring onions – white and green parts-finely sliced

Method:

Mix together the hoisin sauce, 5 spice, light soy sauce and black pepper together.

Spoon the sauce over the salmon and allow to marinate for 10 minutes.

Bake on a tray in the oven at 200C for 12 to 15 minutes until cooked through.

Scatter over the finely sliced radishes and spring onions.
