Recipes: Neven Maguire shares his favourite winter warmers
There is a chill in the air and lots of good vegetables are in season. Soup hits the spot any time of day or night and it's so easy to take to work in a flask.
The carrot and parsnip combination provided here works very well, but instead of parsnip you could use swede, pumpkin, turnip or celeriac. This is a very flexible recipe. Lots of people make their own stock and, these days, I don't put flour in the stock we use in the restaurant.
Chicken casserole with sweet potatoes is a real winter warmer. It doesn't take long to get in the oven and you can't go far wrong with the recipe. Chicken thighs are a favourite cut of mine -- they are good value and have great flavour.
For the French apple tart, I really think you should make the pastry yourself. It is easy and you can make and freeze it ahead of time. The best way to arrange the apples is to start at the perimeter, in a pinwheel fashion, filling the middle after a full circle of slices is in place.
Instead of apples you could use plums, apricots, peaches or rhubarb. I have been buying my vanilla online for some time now. I go to vanillabazaar.com and have been very happy with the value and quality.
