Polenta-Crusted Tofu

you will need

1 packet organic, non-GMO, firm tofu

½ cup polenta

2 tbsps olive oil

Method

Cut the tofu into 2cm slices. Pour the polenta out on to a dinner plate. Roll the tofu slices in the polenta.

Shallow-fry the polenta-covered tofu in a pan of hot olive oil for five minutes on each side, or until golden brown.

Serve with your favourite homemade vegan pesto.
