For the dough 200g butter, at room temperature

60g icing sugar

2 egg yolks

350g plain flour

2 tbsps cornflour

Pinch salt

1 egg yolk, to glaze For the filling 2 x 400g tins sliced pineapple

175g sugar

1 tsp cornflour
