Naughty or Nice?

LAMB KOFTE VS FALAFEL SANDWICH: NAUGHTY: Lamb Kofte To make enough for four, start by soaking 20 wooden skewers in water. This will stop them burning.
In a large bowl, combine one finely chopped red onion with salt, pepper, 1 tbsp of chopped mint, 1 tbsp of ground coriander and 500g of organic Irish lamb mince. Shape the mixture into eight sausages and pierce them through the middle with the skewers. Cook under a hot grill or barbecue for about 8 minutes, turning until golden brown and cooked well. Meanwhile, make a sauce of 150ml of natural yogurt, one chopped clove of garlic and 2 tbsps of chopped mint. Serve the kofte drizzled with hot chilli sauce and yogurt mix in warm pitta breads stuffed with green leaves.
NICE: Falafel Sandwich This Middle-Eastern-inspired sweet-potato falafel sandwich recipe comes from the Fat Free Vegan Blog so it's dairyfree and delicious. Take ½ tbsp ground flax seeds plus 2 tbsps hot water; 2 medium sweet potatoes; 2-3 tsps ground cumin; 2 tsps ground coriander; 2 cloves garlic, minced; ½ tsp cayenne pepper; 1 tsp salt; ¼ cup minced parsley; juice of 1 lemon; 1 cup chickpea (gram) flour; and ½ tsp baking powder. Mix the flax seeds with 2 tbsps hot water and set aside to thicken to an egg-like consistency. Pierce the sweet potatoes with a fork and place on a baking tray, wrapped in foil. Bake for 40 minutes, until soft. Set aside to cool; then peel and place in a bowl. Preheat the oven to 200°C/Gas Mark 6. Mash the sweet potatoes, then add the flax mixture, seasonings (including parsley), lemon juice, and stir. Mix the chickpea flour with the baking powder and add it, a little at a time, to the sweet-potato mixture until combined. Oil a baking sheet and, using a rounded tbsp, make about 20-22 little balls and place on the baking sheet. Flatten the balls to about ½-inch thick and 1½-inches wide. Bake for 20-25 minutes, until medium brown. Serve hot in a pitta with fresh green leaves, tahini and red pepper.
