Karl Henry's: Healthy Quorn Chilli Dinner

If you’re thinking of eating less meat, try using Quorn available in supermarkets. See if anyone notices the difference!
what you need
2 tbsps olive oil
2 medium onions, diced
2 cloves garlic, crushed
350g packet Quorn mince
1-2 tsps hot chilli powder
1 tsp paprika
1 tsp ground cumin
3 tbsps tomato puree
400g can chopped tomatoes
250ml vegetable stock
420g can red kidney beans, drained
420g can cannellini beans, drained
Heat the oil in a non-stick pan and fry the onions and garlic until soft. Now add the Quorn mince and fry for a few minutes.
Add the spices, cook for a couple more minutes, then add the tomato puree, chopped tomatoes and stock. Bring to the boil then gently simmer for 15 minutes, stirring from time to time.
Add the beans and simmer for a further 10 minutes, stirring occasionally. Serve with brown rice or sweet potatoes.
