Jumbo Sausages & Pork Ribs with a Quick Barbecue Sauce and a tomato relish
These jumbo sausages and spare ribs are ideal for the barbecue if we get a bit of Indian summer, or they can be grilled in the kitchen.
Organic pork is available from specialist butchers such as O'Tooles of Terenure, Dublin 6W (0)1 490 5457; www.otoolesbutchers.com), from farmers' markets and direct from producers, either from the farmgate or through their online shops.

These ribs and the sausages are par-boiled before barbecueing, this will reduce the fat and ensure that they are fully cooked.
Serves 4-8, depending on appetite and what else is offered
You will need
1kg/2lb organic pork ribs
8 organic jumbo sausages
Quick Barbecue Sauce:
4 tbsp/60ml tomato ketchup
1 tbsp/15ml honey
1 tbsp/15ml wine vinegar
1 tbsp/15ml Worcestershire sauce
dash of Tabasco
salt and pepper
In advance of cooking, boil the ribs in a large pan of boiling water for 10 minutes.
You can flavour the liquid with sliced onion and half a teaspoon of five-spice powder if you wish. Similarly, simmer the sausages for 2-3 minutes in boiling water.
Drain the ribs and sausages, and leave in the fridge until ready. To make the barbecue sauce: Put all of the sauce ingredients into a jug and mix together well.
(Hint: heat the spoon in hot water before measuring out the honey.) Set aside until required.
Prepare the barbecue or preheat the grill. Cook the ribs for 6-7 minutes on each side. Brush a little of the sauce over the ribs towards the end of the cooking time. Cook the sausages for 5-6 minutes on each side.
Serve with grilled vegetables and/or salad.
If you need more sauce, in addition to the barbecue sauce, you could make this relish.
1lb/450g fresh organic tomatoes, peeled and chopped, or a 400g can organic chopped tomatoes,
1 small onion, chopped
2 cloves garlic, chopped
1 tbsp fresh ginger, chopped
1 tbsp brown sugar
1 tbsp wine vinegar
1 chilli, chopped
1 tbsp fish /soy sauce
In a small pan, simmer all the ingredients over a low heat for 20-30 minutes, stirring every now and then.
Taste for seasoning.
