The weekends are a great time for eating out, but they are also a great time for eating in. You have that bit of spare time needed to try out a new recipe to enjoy with family and friends.
We are coming into a time of year that is so rich in produce, and you can adapt recipes to suit the seasons.
Amaretti baked peaches are a good example, but this recipe also works well with apricots, plums and nectarines. It is a simple, light dish that always impresses.
The Italian Amaretti biscuits are delicious crumbled on to soft fruit and they also make a wonderful cheesecake base.
Salmon and spinach en croute is a meal that looks as great as it tastes. Make sure you buy good-quality organic salmon. Again, this dish works well with any oily fish -- you could try sea trout or mackerel and vary it during the year.
