Over the past couple of years, the pace of cooking has evolved from dishes that take little time to create to those that can be prepared ahead and stored in the freezer.
The Christmas party season is the perfect time to bring the latter to the table for some stress-free entertaining. For me, the use of the freezer is totally acceptable in our speedy world; dishes can be cooked in advance, then defrosted with care.
The spiced lentil soup is great for freezing -- on the day, top it off with some freshly chopped herbs for a colourful finish. The jewelled duck stew is perfect around this time of year and it's a favourite in our house.
Garnish it with fresh coriander, red onion and pomegranate before serving and the colours will come to life.
For dessert, sorbets are great on their own, especially if you fancy something light after all the festivities.
Whichever of these recipes you choose, the use of the freezer will make festive entertaining a little more achievable.
