Eat more oats!
One of the great unsung heroes of the Irish food scene, oats are widely grown, inexpensive, nutritious and versatile -- and they are the perfect start to the day.
Hardly a morning begins in our house without a bowl of porridge with honey and milk. We make it overnight, cooked in an electric slow-cooker (one cup of porridge to three of water, plus a pinch of salt).
This is a great healthy breakfast, providing warmth and slow-release energy throughout the morning, especially if taken with fruit or a glass of fresh orange juice. The vitamin C in the juice helps the body to absorb iron from the oats.
There are plenty of oats to choose from, but we like to support Irish products and use Flahavans, who recently commissioned Kevin Dundon to create a range of oat recipes, two of which are feature hered. There's also a handy booklet of Mary Flahavan's oat recipes free with certain packs, and a range on www.flahavans.com.
