Bean and Chorizo

you will need

200g white beans, soaked in cold water overnight

Olive oil

2 shallots, diced

1 red chilli, chopped

150g chorizo, diced

200ml basic tomato sauce (see recipe)

Salt and pepper


Boil the white beans in salted water for 40 minutes until tender, then drain off the water.

Sauté the shallots in a sauce pot with a little oil for two minutes, add the chilli, then sauté for one minute more.

Add the chorizo and tomato sauce and season with salt and pepper.

Add the beans and simmer on a low heat for 10 minutes, then serve.
