Basic Tomato Sauce

you will need

Olive oil

1 small onion, peeled and diced

1 clove garlic, peeled and crushed

8 tomatoes, peeled, deseeded and chopped

2 tbsps tomato paste

1 bay leaf

½ glass white wine

Salt and pepper

A little vegetable or chicken stock, in case

Method

Heat a saucepan over a medium heat, add a little oil, then add the onion and garlic and cook for five minutes – do not brown. Add the tomatoes, tomato paste and bay leaf, and let it simmer for three minutes.

Add the wine and season with salt and pepper. Let it simmer on a low heat for 10-15 minutes.

If the sauce is a little thick, add some vegetable or chicken stock. Remove the bay leaf and liquidise the sauce.
