Baked peaches with berries & honey ( pesche cotte con frutti di bosco)

4 ripe but firm peaches

150g blueberries

120g raspberries

130ml freshly squeezed orange juice

2 tbsps runny honey

200ml low-fat plain yoghurt

1 tbsp orange zest

Contains: 128 calories, 0.8g fat, 0.4g

saturates, 27.7g sugars, 0.1g salt.

Serves four.

1Pre-heat the oven to 180°C/350°F/ Gas Mark 4. Cut the peaches in half, remove and discard the stones then place the fruit cut-side up in a shallow ovenproof dish.

2 Place the berries in a bowl, pour in the orange juice and honey and mix together. Fill the peach stone hollows with the berries and drizzle the juices left in the bowl over the fruit.

3 Cook in the middle of the oven for eight minutes. Meanwhile, mix the yoghurt with the orange zest. Serve two peach halves per portion, topped with a spoonful of the orange-flavoured yogurt.
