Amaretti

A jar full of these is the perfect gift for the coffee lover in your life. Makes 35-40.

You will need

2 eggs

350g caster sugar

1½ tsps cocoa powder

1½ tsps baking powder

50g plain flour

350g ground almonds

60g icing sugar, sieved

Method

Pre-heat the oven to 180°C/350°F/ Gas Mark 4. Line two biscuit trays with greaseproof paper.

Beat the eggs and sugar in a large bowl until creamy.

Add the cocoa, baking powder and flour, and mix well.

Add the ground almonds and mix well until blended.

Shape scant teaspoons full of the mixture into balls. Roll in the icing sugar.

Place the balls on the tray, one to two inches apart. Bake for 12-15 minutes until 'set' and crackled.

Leave the amaretti to rest on the tray for five minutes before transferring to a cooling rack.
