A treat for all ages

AS the autumn kicks in, it's nice to use vegetables with lovely autumnal hues such as red peppers and purple aubergines.

Babaganoush is a Mediterranean dish that is really healthy: the olive oil contains vitamin E and essential fatty acids, the peppers are full of vitamin A and the aubergine contains folic acid and potassium. Children from age one upwards will enjoy this recipe, which can be shared with older siblings for a healthy after-school or midafternoon snack (Serve it with triangles of toasted pitta bread.)
