Christmas Recipes: Mince Pies with Whipped Cream

On the fourth day of Christmas, Avonmore made for me Mince Pies with Whipped Cream...
Ready Time: 35 mins
450g (1lb) Shortcrust Pastry
900g (2lb) Mincemeat filling
1 egg, beaten
Roll out the pastry onto a floured surface to approximately 3mm thick. Using 3” (7.5cm) and 2½” (6cm) fluted pastry cutters, cut out 36 rounds of each size.
Line 2½” (6cm) patty tins with the larger rounds and place a heaped tablespoon of mincemeat filling in each.
Moisten the edges of one side of the smaller rounds and place damp side downwards on top of the mincemeat.
Press the edges of the pastry lightly together and brush the tops with beaten egg.
Bake at 200C for 15 – 20 minutes until the pastry is golden brown.
Serve warm or cold with Avonmore Whipped cream.
