Christmas Recipe: Quick Christmas Pudding

On the eleventh day of Christmas, Avonmore made for me Quick Christmas Pudding...

We have teamed up with Avonmore to bring you twelve delicious recipes to get you in the mood for Christmas.

Ingredients

50g dried apricots, chopped

300g mixed dried fruit

100g dried figs, chopped

100g glace cherries, chopped

120ml brandy

150g butter, softened

100g brown sugar

2 eggs, at room temperature

120ml marmalade

60g plain flour

200g breadcrumbs

2 tsp mixed spice

Directions

Combine the first four ingredients in a microwave-safe bowl and pour over the brandy. Microwave on medium-low for 10 minutes until the fruit has absorbed the brandy. Leave to cool.

Beat the butter and sugar until creamy. Add the eggs, one at a time, beating until smooth.

Stir in the remaining ingredients, including the fruit mixture, until combined.

Lightly grease a 1.5-litre microwave-safe pudding basin and line the base with a circle of parchment paper. Spoon the mixture into the basin and smooth over the surface. Cover the pudding with a double layer of parchment paper and secure with kitchen string.

Place an overturned saucer in the microwave and rest the basin on it. Microwave on medium-low for 35 minutes. Leave to rest in the basin for 15 minutes, then insert a skewer into the centre to check if it is cooked through.

Turn out onto a plate and serve with Avonmore Freshly Whipped Cream or Avonmore Freshly Whipped Brandy Cream.
