Young chefs prove they are hungry for success
BEING handy with a knife will be a valuable asset to five young people who are preparing to do battle later this month, writes Grainne Cunningham.
The five are finalists in the Euro-toques Young Chef Competition 2010. To get this far, the finalists, who had to be aged under 25, had to identify a range of foods while blindfolded and create a signature lamb dish. Now they must prove their prowess in Dublin's Chapter One.
The five finalists are Margaret Roche, who works at The Cellar at The Merrion; Keelan Higgs of Chapter One; Mary Ryan, who works at Knockranny House Hotel in Mayo; Pauli Vanttila, from Finland, who cooks at Gregan's Castle; and Una Donohoe of The Egg Restaurant at Avoca.
Each of the budding chefs will be required to prepare an original main course, incorporating the rack, kidneys and sweetbreads of Irish lamb.
The winner will be announced on November 29. Top prize will be an all-expenses-paid stint at two-Michelin star The Ledbury in London.
